Ingredients
For the Batter:
- 2 ripe bananas (the riper, the sweeter)
- 2 tablespoons raisins
- 2 tablespoons cocoa powder
- 2 eggs
- 1 teaspoon baking powder
- 1 cup oats (about 90 g)
- 5 tablespoons yogurt or sour cream
- 1 apple (grated or finely chopped)
- 1 tablespoon pumpkin seeds
- 2 tablespoons walnuts (chopped)
- 1 teaspoon cinnamon
- Olive oil (for greasing the pan)
Instructions
1. Prepare the Base
Start by peeling the ripe bananas and placing them in a large mixing bowl. Mash them thoroughly using a fork until smooth and creamy. This will act as the natural sweetener for your cake.
2. Blend the Wet Ingredients
Add the eggs and yogurt (or sour cream) to the mashed bananas. Mix well until everything is fully combined and smooth. The mixture should look creamy and slightly thick.
3. Add Flavor & Sweetness
Stir in the cocoa powder, raisins, and cinnamon. These ingredients give the cake a rich, slightly chocolatey taste with natural sweetness and warmth.
4. Incorporate the Oats
Add the oats to the mixture. You can use them as they are for a more textured cake or blend them slightly beforehand if you prefer a finer consistency. Mix until evenly distributed.
5. Add Fruits & Nuts
Fold in the grated or finely chopped apple, walnuts, and pumpkin seeds. These add moisture, crunch, and extra nutrition to the cake.
6. Add the Leavening
Sprinkle in the baking powder and gently mix again. This helps the cake rise and become soft and fluffy.
7. Prepare the Baking Pan
Lightly grease your baking pan with olive oil to prevent sticking. You can also line it with parchment paper for easier removal.
8. Bake the Cake
Pour the batter into the prepared pan and spread it evenly. Bake in a preheated oven at 180°C (350°F) for about 30–35 minutes, or until a toothpick inserted in the center comes out clean.
9. Cool & Serve
Let the cake cool in the pan for 10–15 minutes before removing. Slice and serve warm or at room temperature.
Tips for Best Results
- Use very ripe bananas for maximum sweetness.
- If you like it sweeter, add a few extra raisins or a drizzle of honey (optional).
- For a richer flavor, lightly toast the walnuts before adding them.
- You can substitute pumpkin seeds with sunflower seeds or skip them altogether.
