Strawberry White Chocolate Cake Mix Cookies

Easy, soft, and irresistibly delicious cookies

Description

There’s something almost unfair about how easy cake mix cookies are compared to how good they taste. With a simple shortcut—using a boxed mix—you get cookies that taste like you spent far more time baking than you actually did.

Ingredients

  • 1 box (15.25 ounces) strawberry cake mix
  • 1/2 cup unsalted butter, melted
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 4 ounces cream cheese, softened
  • 1 cup white chocolate chips
  • 1/2 cup M&M’s (optional)

Instructions

Prepare the Oven

Preheat the oven to 350°F (175°C).
Line a baking sheet with parchment paper.

Mix the Wet Ingredients

In a large bowl, combine:

  • melted butter
  • egg
  • vanilla extract
  • softened cream cheese

Mix until smooth and creamy.

Form the Dough

Gradually add the strawberry cake mix to the wet ingredients.
Stir until a soft dough forms.

Add Mix-ins

Fold in the white chocolate chips and M&M’s (if using), ensuring they are evenly distributed.

Chill the Dough

Cover the dough and refrigerate for at least 1 hour.
This step helps improve texture and prevents spreading.

Shape the Cookies

Scoop rounded balls of dough and place them on the prepared baking sheet, spacing them about 2 inches apart.

Bake

Bake for 9 to 11 minutes, until the edges are set and the centers remain slightly soft.

Cool

Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Serving

Enjoy these cookies slightly warm or fully cooled. Their soft texture and sweet strawberry flavor pair perfectly with the creamy white chocolate.
